Instant Pot Black Bean Patties
This Instant Pot BLACK BEAN AND VEGGIE PATTIES are super healthy, juicy and high in protein. It saves you lot of money. You can make it ahead, freeze it and carry it anywhere without any mess. These patties are Mexican flavor bomb and it is a great party dish. You can use it as patties for your burger or you can make it into small bite size pieces with avocado mayo dip and use it as an appetizer for your parties. It's a WIN WIN either way!!!!!!!!!!!

Ingredients Required:
Dry uncooked black beans - 1 Cup [or Cooked Canned Black Beans - 2 Cups]
Potato - 2 Cups (Chopped)
Baby Carrots - 1 Cup
Green Beans -1/2 Cup (Chopped)
Sweet Corn -1 Cup
Onion -1 Cup (Chopped)
Jalapeno - 1
Salt - As required
Black Pepper Powder - As Required
Taco Seasoning - 1 Tbsp
\r[Taco Seasoning:\rCumin Powder -1 TSP\rChilli Powder - 1 TSP\r
Garlic PowdeR-1/2 Tsp\rOregano -1/2 TSP]
Topping:
Ice Cream
Chocolate Syrup

Step 1:

PREP

1) Soak 1 Cup of dried black beans in water overnight.
2) Chop the onion, peel and chop the potato, beans.
3) After 8 hours, drain the water from beans and add it to the Instant Pot.
4) Then add chopped potato, carrot and beans. Close the Instant Pot.

COOK
1) Select/Dial In the Manual/Pressure cook mode, set the pressure "High", set the timer to 5 minutes and start the IP. Once it cooks down, wait for the pressure to release naturally and then open the Instant Pot.

2) Mash everything with your masher coarsely. Add in taco seasoning, salt, pepper, onion, sweet corn and jalapeno and mix everything thoroughly until it is well combined.
3) To get even patties, take a 1/2 cup measuring cup. Scoop 1/2 cup of the mashed veggies and beans and using your hand make them into patties. Arrange in a baking tray.
4) You can bake it in the oven for 10 minutes on each side at 350F or you can use air fryer and fry it for 8 minutes on each sides st 350F or you can shallow fry in in your pan for 5 minutes on each side in medium flame.

SERVE
Serve it between your burger buns and add lettuce, onion, avocado, tomato, avocado mayo and ketchup or you can make small bite size patties and serve it as an appetizer.

STORE AND FREEZE:
Store it in the fridge for 3 days. Freeze it up to 3 months in the freezer.
